Healthy Ginger Bread Recipe (Christmas Recipe)
Ingredients
2 1/4 cups gluten-free flour blend (make sure it includes xanthan gum if your blend doesn't already contain it)
1/2 cup almond flour
1 1/2 tsp ground ginger
1 tsp cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1/2 tsp baking soda
1/4 tsp salt
1/2 cup coconut oil, melted
1/3 cup molasses
1/4 cup honey or maple syrup (for vegan option)
1 large egg (or a flax egg for a vegan option: 1 tbsp ground flaxseed mixed with 3 tbsp water)
1 tsp vanilla extract
Instructions
Prep Dry Ingredients: In a large bowl, whisk together the gluten-free flour blend, almond flour, ginger, cinnamon, nutmeg, cloves, baking soda, and salt.
Wet Ingredients Mixture: In a separate bowl, mix the melted coconut oil, molasses, honey or maple syrup, egg (or flax egg), and vanilla extract until well combined.
Combine Wet and Dry Ingredients: Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms. If the dough is too sticky, add a bit more gluten-free flour.
Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 1 hour (this makes it easier to handle).
Preheat Oven and Prepare Baking Sheets: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
Rolling Out the Dough: On a surface dusted with gluten-free flour, roll out the dough to about 1/4 inch thickness. Use gingerbread cookie cutters to cut out shapes.
Baking: Place the cookies on the prepared baking sheets and bake for 8-10 minutes, or until the edges are just starting to brown.
Cooling: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Decorating (Optional): Decorate with icing or enjoy them as is!
